  • 2.25 cupsall-purpose flour
  • 2.5 tbspcocoa powder
  • 1.5 tspcornstarch
  • 0.75 tspbaking soda
  • 0.5 tspsalt
  • 8 tbspunsalted butter, softened
  • 6 tbspvegetable shortening
  • 1.5 cupsgranulated sugar
  • 1large egg
  • 1large egg yolk
  • 1.5 tspwhite vinegar
  • 1.5 tspvanilla extract
  • 1 tbspred food coloring
  • 1.33 cupswhite chocolate chips, divided
  1. 1Preheat oven to 375 degrees. In a medium mixing bowl, combine flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
  2. 2In another mixing bowl or stand mixer, cream together the shortening and sugar for about 3 minutes until fluffy. Slowly add in the egg yolk and egg and mix to combine. Add vinegar, vanilla, and food coloring and mix until just combined.
  3. 3Add in the dry ingredients until combined. Mix in 1/2 cup white chocolate chips.
  4. 4Line cookie sheets with parchment paper and scoop out the cookie dough into heaping tablespoons. Be careful not to flatten the cookies.
  5. 5Bake for 8–9 minutes in the preheated oven. Transfer to a wire rack to cool and press extra white chocolate chips on top. Keep the cookies stored in an airtight container.
