  • 1 cupchopped dates
  • 0.5 cupwater
  • 0.25 cupsugar
  • 1.5 cupquick-cooking oats
  • 1 cupall-purpose flour
  • 1 cuppacked brown sugar
  • 0.5 tspbaking soda
  • 0.25 tspsalt
  • 0.333 cupbutter, melted
  • 1large egg white, room temperature
  1. 1Preheat oven to 350°F. Place dates, water, and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly.
  2. 2In a large bowl, mix oats, flour, brown sugar, baking soda, and salt; stir in melted butter and egg white. Press half the mixture into an 8-inch square baking pan coated with cooking spray.
  3. 3Spread carefully with date mixture; top with remaining oat mixture.
  4. 4Bake until lightly browned, 20–25 minutes. Cool in pan on a wire rack. Cut into bars.
