- 2 cupsugar
- 1 cupbutter, softened
- 1 tspvanilla extract
- 1 tspsalt
- 1 containerricotta cheese, 15-oz
- 4 cupall-purpose flour
- 1 tspbaking soda
sweet vanilla icing
- 0.667 cupsweetened condensed milk, plus 1 tablespoon
- 0.5 cupbutter, softened
- 1 tspvanilla extract
- 2 cuppowdered sugar
- red food coloring (optional)
Method
- 1Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt, and ricotta cheese.
- 2Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets.
- 3Bake at 350°F for 10 to 13 minutes. Cool on wire racks.
- 4To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cooled cookies.
