  • 2 cupsugar
  • 1 cupbutter, softened
  • 1 tspvanilla extract
  • 1 tspsalt
  • 1 containerricotta cheese, 15-oz
  • 4 cupall-purpose flour
  • 1 tspbaking soda

sweet vanilla icing

  • 0.667 cupsweetened condensed milk, plus 1 tablespoon
  • 0.5 cupbutter, softened
  • 1 tspvanilla extract
  • 2 cuppowdered sugar
  • red food coloring (optional)
  1. 1Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt, and ricotta cheese.
  2. 2Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets.
  3. 3Bake at 350°F for 10 to 13 minutes. Cool on wire racks.
  4. 4To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cooled cookies.
