Royal Coconut Cookies

  • 0.5 cupshortening
  • 0.5 cupgranulated sugar
  • 0.5 cupfirmly packed brown sugar
  • 1egg, beaten
  • 1 tspalmond or vanilla extract
  • 1 cupuncooked rolled oats
  • 1 cupshredded coconut
  • 1 cupall-purpose flour, sifted
  • 1 tspbaking soda
  • 0.25 tspsalt
  1. 1Work shortening with a spoon until soft. Add sugars and beat until combined.
  2. 2Add beaten egg and extract; beat until well blended.
  3. 3Stir in sifted dry ingredients (flour, baking soda, salt), then fold in rolled oats and coconut.
  4. 4Shape into small balls and place on lightly greased baking sheet.
  5. 5Bake in moderate oven (350°F) for 12 minutes or until lightly brown.
  6. 6Remove from cookie sheet and cool on cake racks.

Notes

Quantities approximate — faded/photocopied community cookbook source. Mrs. Leone's variation: uses 1 cup sifted flour, ¼ tsp each baking soda and baking powder, ½ cup shortening.
