Ingredients

all-purpose flour
2 cups
sugar
2 tsp
ground cinnamon
1.5 tsp
baking soda
1.5 tsp
salt
1 can
(8¾ oz.) crushed pineapple (drain and reserve juice)
1.5 cups
oil
1.5 cups
chopped nuts
2 cups
grated carrots
3
eggs, well beaten
2 tsp
vanilla
Method

Mix flour, sugar, cinnamon, baking soda, and salt together.

Drain pineapple, reserving the juice. Add the reserved pineapple juice to the dry mixture.

Add oil, eggs, and vanilla. Beat 3 minutes.

Stir in pineapple, carrots, and nuts.

For an oblong pan (13x9), bake at 350°F for 1 hour.
