  • 3 cupsall-purpose flour
  • 2 cupssugar
  • 2 tspground cinnamon
  • 1.5 tspbaking soda
  • 1.5 tspsalt
  • 1 can(8¾ oz.) crushed pineapple (drain and reserve juice)
  • 1.5 cupsoil
  • 1.5 cupschopped nuts
  • 2 cupsgrated carrots
  • 3eggs, well beaten
  • 2 tspvanilla
  1. 1Mix flour, sugar, cinnamon, baking soda, and salt together.
  2. 2Drain pineapple, reserving the juice. Add the reserved pineapple juice to the dry mixture.
  3. 3Add oil, eggs, and vanilla. Beat 3 minutes.
  4. 4Stir in pineapple, carrots, and nuts.
  5. 5For an oblong pan (13x9), bake at 350°F for 1 hour.
