  • 0.5 cupGuinness
  • 4 lbwhole meal flour (whole wheat flour)
  • 0.75 lball-purpose flour
  • 1 tbspsalt
  • 1 tspbaking soda
  • 4 ozmolasses
  • 4 cuprolled oats, plus extra for sprinkling on top
  • 2 qtbuttermilk

  • 1 pintGuinness
  • 2 cupsugar
  1. 1Preheat oven to 350°F.
  2. 2Place all dry ingredients in a large bowl. Combine all wet ingredients in a separate bowl.
  3. 3Add the wet to the dry in three batches, mixing and folding by hand lightly — the mixture should be quite sticky.
  4. 4Portion into greased or buttered muffin, loaf, or round cake pans.
  5. 5Sprinkle lightly with rolled oats.
  6. 6Bake until golden brown on the bottom, about 20 to 30 minutes — the bread should sound hollow when tapped on the bottom.
  7. 7Remove from the pans and cool slightly.
  8. 8GUINNESS REDUCTION — Combine Guinness and sugar in a large stockpot. Bring to a boil and reduce to a simmer until reduced by half (approx. 1 hour). Remove from heat and allow to cool at room temperature, then refrigerate. Do not leave the pot unattended while coming to a boil as it may boil over.
  9. 9TO SERVE — Place 2 oz of olive oil in a saucer or small plate, drizzle 2 oz of Guinness Reduction at room temperature, and serve as a dip alongside the bread. Enjoy with Kerrygold Irish butter.

Notes
